salmon croquettes

Here's a fabulous recipe I tried yesterday for my family. If you like salmon patties, then you're gonna love this.







Ingredients:

Croquettes

1 (14 oz) can red salmon drained

1 egg

2/3 cup club cracker crumbs

1/2 teaspoon baking powder

2 teaspoons lemon juice

1/4 teaspoon salt

1/3 cup dried minced onion

1/2 tablespoon Italian Seasoning

Coating

1 egg

1/4 cup milk

½ -1 cup club cracker crumbs

Mix baking powder and lemon juice and set aside. Mix remaining ingredients. Add lemon juice mixture to salmon and mix thoroughly. Shape into balls and dip in mixture of eggs and milk. Roll in ground crackers until thoroughly coated. Fry in deep fryer for 3-5 minutes at 400o or until lightly brown. Remove and drain.

Cream Sauce

4 tablespoons butter

4 tablespoons flour

½ teaspoon salt

½ teaspoon pepper

2 cups milk

Melt butter in small pan and mix in flour, salt and pepper until smooth. Add milk and stirring often, boil on medium until sauce thickens.

Pour sauce over croquettes on plate and top with cooked peas.
